Ingredients

2 peaches, sliced
3 cups arugula
1 ball of burrata cheese, torn into pieces
Bresaola prosciutto
Olive oil (for grilling and to drizzle on the arugula)
1 tablespoon pesto
Salt and pepper to taste

Method

Preheat the Grill: Preheat your grill to medium-high heat.

Grill the Peaches: Brush the peach halves with olive oil. Place the peaches on the grill, grill for about 3-4 minutes, then flip and grill for another 2 minutes. The peaches should be slightly softened but still hold their shape.

Prepare the Dressing: In a small bowl, whisk together the arugula, salt, and olive oil.

Assemble the Salad: On a large platter or individual plates, spread the arugula. Arrange the grilled peaches on top of the arugula. Tear the burrata cheese and place it among the peaches. Add the prosciutto and drizzle the pesto over everything.

Serve immediately while the peaches are still warm, allowing the burrata to melt slightly over the salad. Enjoy immediately.
