Herb-Infused Golden and Crispy Potatoes

No matter the occasion, these potatoes are sure to add a burst of flavour and freshness to your meal! If you are having a casual family dinner, or a holiday feast these potatoes are perfect to serve them as a comforting side dish alongside grilled meats, roasted chicken, or fish.

Ingredients

1 kg baby or new potatoes (you can use any type, cut into chunks if larger)
5 tbsp olive oil
1 lemon (zested and juiced)
2 cloves garlic (minced)
2 tbsp fresh parsley (chopped)
1 tbsp fresh dill (chopped)
1 tbsp fresh thyme (chopped)
1 tbsp fresh chives (chopped)
Salt and black pepper, to taste
1/2 tsp red pepper flakes (optional, for a bit of heat)
Or Jalapeno Peppers (optional, for a bit of heat)

Method

Boil the Potatoes

Wash the potatoes thoroughly. If using baby potatoes, you can leave them whole; for larger potatoes, cut them into equal-sized chunks.

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt.

Bring to a boil over medium heat. Cook the potatoes for about 10-15 minutes or until they are tender but not falling apart.

Drain the potatoes and set them aside.


Prepare the Herb-Mix

While the potatoes are boiling, in a small bowl, combine the olive oil, lemon zest, lemon juice, and minced garlic.

Stir in all the chopped fresh herbs (parsley, dill, thyme, chives) and red pepper flakes (if using). Season with salt and pepper to taste.

Preheat the Oven to Cook the Potatoes

In a large roasting tin, add the drained potatoes, drizzle with olive oil and salt and leave in the oven until they begin to turn golden and crispy on the edges (about 10-15 minutes).

After they are cooked pour the herb-lemon mixture over the potatoes and gently toss them until they are evenly coated with the herbs and lemon allowing the flavours to meld together. Taste and adjust seasoning if needed.

Serve

Transfer the herb-infused potatoes to a serving dish. Garnish with a few extra fresh herbs and a squeeze of lemon if desired.
