Pasta Pomodoro or (Spaghetti with Tomato Sauce)

Pasta Pomodoro is special because it’s perfect for any occasion—from a quick weeknight meal to a romantic dinner. It's a true comfort food that feels both elevated and homely, bringing a little taste of Italy to your table with every bite.


Ingredients

  • 340g spaghetti or if your preferred pasta
  • olive oil
  • 4-5 garlic cloves, finely chopped
  • 680g fresh tomatoes, diced (and add tomato paste for extra flavour)
  • Salt and freshly ground black pepper to taste
  • fresh basil leaves, torn into pieces
  • Parmesan cheese (optional)
  • Extra basil for garnish

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the spaghetti until al dente, following package instructions. Make sure the pasta is cooked on the same time as the sauce. After cooking, the pasta transfer directly from the pot into the simmering tomato sauce, carrying a bit of that salty, starchy pasta water. This step is key—it allows the pasta to absorb the flavourful juices and lets the sauce cling to every strand.
  2. Add Garlic: Heat olive oil in a large skillet over medium heat. Add the garlic until fragrant and softened, about 2-3 minutes.
  3. Add tomatoes: Stir in the diced tomatoes. Season with salt and pepper. Simmer for 10-15 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens. Add extra tomato paste for extra flavour and add a splash of pasta water if the sauce becomes too thick.
  4. Add pasta and basil: Toss the cooked pasta into the skillet with the sauce. Add the basil leaves and toss everything together until the pasta is well coated. Adjust seasoning with salt and pepper as needed.
  5. Serve: Plate the pasta, garnish with extra basil leaves, and sprinkle with Parmesan if desired.
